Made plenty of bottles of lemon marmalade as I am living next to a lemon farm which helps. I use only brown sugar for more character taste so colour a bit browner but still awesome. I found that the boiling part for 30 lemons was well over an hour as with fig jam I have made tons too...also free figs in season here. Sugar used was 2kg for 28 medium lemons.
