It should be a minimum of 8 hours, up to 10-11 for cooking. You'll know it's done when the pork pulls apart easily with a fork.<br />Also, not sure if you've made the recipe before? Did it with a 4.5 pound bone in Boston Butt. I cooked it at 250 degrees for 8 hours in a cast iron skillet. I only used half of the salt and sugar to be on the safe side. It came out perfect and I served it with broccoli au gratin rice, garlic toast, and salted and black peppered yellow tomato slices.
