Julie's Crispy Kale
This is one of easiest way to get kids (and adults) to eat mounds of veggies....
Take stems off kale. (I prefer lacinato and dino, myself.) Make sure that leaves are really dry to insure nice crispiness. Slice leaves into any shape you like and place on baking sheet. Lightly drizzle olive oil and sprinkle salt on kale. Bake for 10 minutes at 350. Eat right away. So good.

mmmm... i've been meaning to try this for about forever. i do love a good lacinato braise, w/ loads of garlic and anchovies and olive oil, but a little crispy-crunch might be just what i need every now and again! thx for the reminder :) Molly
