As I packed our bags to visit my mom in Bolinas, my neighbor brought a basket of lemon cucumbers from his garden. My Greek ancestors whispered....tzatziki. What could be better with roasted goat?
16oz. Bellwether Farms sheep yogurt, plain
2 lemon cucumbers, pealed and seeded
2 cloves garlic, pressed
juice of one Meyer lemon
a dozen freshly chopped mint leaves
salt and pepper to taste
Combine all ingredients and serve along side roasted goat or lamb. Tzatziki is also delicious on a sandwich with slices of the leftover roast.
